Pinni



Ingredients:
  • 2 cups of flax seeds
  • 2 cups of almonds
  • 2 and 1/4 cup of unsweetened ground coconut.
  • 2 cups sultana raisins
  • 2 cups sesame seeds seeds
  • 2 cups of suji/cream of wheat
  • 8 cups of durham flour
  • 6-7 cups of brown sugar
  • 1 and 1/2 table spoon of green cardamom powder (optional)
  • 2 cups of olive oil or any vegetable oil or desi ghee


Directions:

Take the almonds, and ground them in the chopper. Then put them in a big deep pot. In the big pot, add the raisins and coconut as well.


Roast the flax seeds in non-stick deep pan on medium heat. It will take about 10 minutes for it to become crispy, then put it onto a plate and let it cool down.
When the flax seed has cooled down, add it to the chopper and grind it, then add it to the pot with the other ingredients.















Roast the sesame seeds on low medium heat, it will take about five minutes.


Add these rousted sesame seeds in the pot too.


Then start roasting the cream of wheat. Put the cream of wheat in a non-stick pan and add 1/4 cup of olive oil. Keep stirring for equal amount of heat distribution, it will also take about 10 minutes or until crispy.

Then add this roasted cream of wheat into the pot too
Being roasting the flour in the same non-stick pan on medium heat. Keep stirring, then after 10 minutes, add 1 and 1/2 cups of olive oil. Continue stirring until the flour becomes crispy. You can taste it to know when it is ready as well.


Add the roasted flour into the pot with other ingredients, and mix everything with a spatula.


Take another pot and add in the brown sugar. Add two cups of water and let it boil for 10 minutes on medium heat. When it starts boiling, count the time, and keep stirring to avoid overflow.

Put this brown sugar syrup in the big pot where you have all the ingredients as shown in the picture, mix every thing quickly.


Start making the balls or just spread on the plates when it has cooled down then cut it into desirable pieces. To make the balls, it will take about 1 hour (if you use both hands and make two balls at a time). Tip: If the mixture is not sticking together, then add a little bit (1 spoon at a time) of boiled room temperature water to the mixture. This recipe makes approximately 130 balls. You can keep in the fridge for up to 10 days or put them in a ziploc bag and freeze them, and just take out the amount every week of how much your family consumes.
