Ingredients:
- 2 small onions cut in to small cubes/slices
- 1 table spoon freshly ground garlic
- 1 table spoon freshly ground ginger
- 3 medium to large size capsicum cut into small cubes
- 540 ml of red kidney beans can, washed and drained
- 3 cups of tomatoes peeled and diced OR 900 mL crushed tomatoes
- 1 and 1/2 lbs. of ground beef OR 2 lbs.
- 1 tablespoon cumin powder
- 1 tablespoon sea salt
- 1 table spoon brown sugar
- 1 pinch of clove powder
- 1/2 teaspoon chili powder OR more, according to your taste
- 1/2 teaspoon coriander powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon of paprika powder
Take a deep pot and pour 1/5 cup of cooking oil, add the sliced onion in it, and cook on medium heat. Stir with spatula
When the onion becomes translucent, add garlic and stir
After a minute add ground beef and stir
When you see all the oil coming out from the ground beef and the meat colour has changed, then add the kidney beans and stir
After 5 minutes, add all the spices and ground ginger, stir again
After 2 minutes, add capsicum and stir. Let this cook for another 6 minutes
After 6 minutes, add all the tomatoes and stir. Let this cook for 30 minutes, and stir every five minutes.
After half an hour, add two cups of water and let it simmer for another 30 minutes on low heat with the lid on pot.
Your delicious healthy full of iron meal is ready! If you would like it more spicy, add 1 tablespoon of chili/hot sauce.
You can enjoy with boiled rice or crackers or dinner rolls or simply with mix salad!
