Vegetable Pasta

Servings: 50 people

Ingredients:
  • 1 cup cooking oil (overall throughout the recipe)
  • 1 whole garlic peeled and ground
  • 2 tablespoon freshly ground ginger
  • 2 cans of red kidney Beans 796 ml  each
  • 900 grams of small shell pasta
  • 2 kg of frozen mix vegetable
  • 2 pounds of Broccoli crowns
  • 2 tablespoons salt (for boiling/cooking pasta)
Spices & Herbs:
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 tablespoon thyme
  • 2 teaspoon red chili powder
  • 1/4 teaspoon clove powder
  • 1 and 1/2 teaspoon black paper ground
  • 2 teaspoon cumin powder
  • 3 teaspoon sea salt






















Directions:
Open both kidney beans cans, wash and drain, then put aside.
Wash and cut the broccoli into small pieces, boil in the pot with water and little bit of cooking oil for about 7 minutes. You will notice the colour of the broccoli become more greener, at this point turn off the heat and drain the water and put aside.

Take another deep pot and put all the frozen vegetable into it. Add little bit of oil, 1/4 cup of water on and cook on medium heat. Let it cook until all the water disappears, this will take about 20 minutes.

Take a big pot, add water, 2 table spoons of sea salt, 2 table spoon of oil, and pour in the uncooked pasta. Cook the pasta until it is tender, then add 2 cups of cold water. Then drain the water out from the pasta (using a coliander) and then put this pasta straight into the big foil tray and spread it evenly in the tray.


Take a non-stick deep pan, add 1/2 cup oil and turn on the heat onto medium. Add the ground garlic and stir 2-3 times. About a minute you can see the garlic colour has changed slightly, at this point add all the spices and herbs.

Stir 2 to 3 times, then add the kidney beans. Stir gently, add freshly ground ginger and stir one time.

After a minute add all the cooked vegetables and stir

On top of the pasta in the tray put the cooked broccoli, as shown in the picture.


Pour all the mixture from the non-stick pan as shown in the picture in the tray on top of the broccoli.

Gently mix each part of the tray with plastic spatula.

Cover with the tray's lid, and your delicious colourful vegetable pasta is ready to serve! You can serve this pasta for up to fifty people along with other food. Total cooking time is about 1 hour to 1 and 1/2 hour.
