Pepper Salad

Servings: 10 people (as it is served with other foods)


Ingredients:

  • 1 orange pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 medium sized red onion
  • 1 and 1/2 cup corn
  • 1 large avocado
  • 1/2 lemon

Directions:

Cut the three different coloured peppers in to small cubes.
Chop the red onion, and then wash it in normal-cold water three to four times.
Cut the avocado in half, and take out the seed. Then on each half, make lines with your knife (as seen in picture above).

In a medium sized bowl, mix the corn, peppers, onion. Scrape out the avocado (because of the cuts, they will come out as small cubes), and gently mix as well. On the top, squeeze out the lemon and mix.

Note: Please do not add any spices, otherwise the peppers will begin to release water and the salad would not become good.

Your colourful salad is now ready to be served! You can enjoy with any food, and it is great for those that are not very fond of green salads.
Note: This salad is good to eat for up to two days. Keep in the fridge with cling wrap.
