Mix Green Salad

Serving of 25
Ingredients:
  • 1/5 cup of olive oil
  • 1/2 lemon
  • 1 can of kidney beans, washed and drained
  • 1 cup corn
  • 1 and 1/2 teaspoon sea salt
  • 1 and 1/2 teaspoon oregano
  • 1 and 1/2 teaspoon basil
  • 1 and 1/2 teaspoon thyme
  • 1 and 1/2 teaspoon ground black pepper
  • 2 pounds broccoli crowns, cut as shown in the picture
  • 500 grams shredded carrots
  • 1 bunch of Romaine lettuce OR any leaf lettuce
  • 250 g baby spinach













Directions:

Add all the above ingredients (excluding the romaine lettuce and baby spinach), into a big bowl and mix. Squeeze a whole lemon on top and let it marinate in the fridge for one to two hours. If you would like to add onions, you can add 1 red onion, thinly sliced and washed.


Before serving the salad, add one bunch of Romaine lettuce OR leaf lettuce washed and cut into small pieces, and 250 grams of baby spinach (also washed) to the bowl and mix.

Your healthy salad ready to serve!
