Potatoes with Spinach

Servings: 6 people

 Ingredients:
  • 2 packs of frozen chopped spinach 300 grams each
  • 4 garlic cloves
  • 500 grams of potatoes peeled and cut like cubes
  • 1 small and 1 medium size onion
  • 1/3 cup oil
  • 1 tablespoon freshly ground garlic
  • 1 tablespoon freshly ground ginger
  • 2 medium size tomatoes
Spices:
  • 1 teaspoon sea salt
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 2 pinch of clove powder
Directions:

Take a pot and put the spinach, garlic cloves, small onion (cut into small pieces), and 2 cups of water into the pot. Let this cook on medium-high heat, until the water is gone. Stir a few times while cooking.

Turn off the heat when it has fully cooked, and put in a food processor and chop the mixture (you can also use a hand mixer). Once it has become smooth, set it aside.

Ground the medium sized onion and put in a non-stick pan and pour in the oil as well. Let this cook on medium heat.

Once the onion becomes translucent, add in the ground garlic and stir.


After a minute or so, add in all the spices and stir.

Then add in the tomatoes and stir.

Add the potatoes and ground ginger.
Stir 2-3 times and add 1/2 cup water.















Cover the pan with its lid for 10 minutes or until potatoes have cooked but wont lose its shape.
















Add the cooked spinach mixture and mix carefully in the pan. Cover the pan again, and let it simmer on low heat for 5 minutes.

Turn off the heat after 5 minutes and your delicious palak alu (spinach with potatoes) is ready to serve! Enjoy with roti, naan or boiled rice. This dish can also be used as a side dish for your dinner party.
