Kheer (Rice pudding)

Servings: 15-20 people

Ingredients:
  • 4 liter of homo milk
  • 1 cup Basmati rice
  • 1 cup half and half cream (optional)
  • 1 and 3 quarter of a cup granulated cane sugar
  • 1/2 cup peeled and thin cut almond for garnish
  • 4 green cardamoms
Directions:

Wash the rice in a bowl two to three times and let it soak in the water for 30 minutes.

In a big deep pot, add the homo milk and green cardamoms. Turn the heat onto medium heat and let it boil.

When the milk has reached its boiling point, then add the rice with its water, and keep stirring on and off. When you add the rice, note the time after adding the rice as it will take a total of one hour to make this sweet dish.

After 10 minutes when the rice has become thick, keep stirring on and off so that it wont stick to the bottom of your pot.

After 40 minutes this mixture (kheer) will become thick, continue mixing so the rice begins to to break apart while you stir. At this point also add in the sugar and keep stirring.

After 10 minutes when the kheer starts to boil again, add in the half and half cream and stir again. Let this cook for another 10 more minutes and check the sweetness (if you want it more sweeter, then add more sugar).


Put in the serving bowl and garnish with almonds.
Before serving you can put few drops of Ruh kewra for the beautiful fragrance.
