Fried Fish


Ingredients:
  • 2 pounds of fish fillet or fish with bone (your choice)
  • 2 tablespoon of ground garlic
  • 1/2 a lemon
  • 2 and 1/2 tablespoon of Chapli Kebab Masala
  • 1 teaspoon of chili powder
  • 1 teaspoon of turmeric powder
  • 4 table spoon of basin / graham flour

Directions:

Optional Step: 2-3 hours before marination, to minimize the fish 'smell', make a paste from 2 tablespoons of plain yogurt and 3 tablespoons of flour. Then cover all the fillets with this paste, and put in fridge. After 2-3 hours, gently wash the fillets and drain the water completely, and then marinate with the spices.

Add all the spices and ground garlic plus squeeze the lemon, mix gently each piece.

Let it marinate for 4 hours in fridge.

After 4 hours sprinkle Basin and cover each fillet. Heat up the oil in a deep frying pan, fry the fillets until they are golden brown.


Enjoy your fried fish! It is ready to serve with freshly baked naan, onion and tomato salad.

Gajrela


Ingredients:
  • 2 lbs. carrots
  • 4 L homogenized milk
  • 1 cup Basmati rice
  • 1 and 1/2 cup to 2 cups of sugar (according to your taste)
  • 4 green cardamoms
  • 1 cup almonds (peeled and chopped for garnish)
Directions:

Take a big deep pot and add the homogenized milk, the cardamoms and cook on medium-high heat. Let it come to a boil.


As you wait for the milk to come to a boil, shred the carrots in a food processor and soak the Basmati in water (for 15 minutes).













When the milk is boiling, add in the shredded carrots, and lets cook for 35 minutes. Stir frequently during this time.













After 35 minutes, add in the rice and stir. Let it cook and keep stirring until all the rice becomes tender/soft and has been completely mixed in well.











Then add in the sugar and stir. Mix it well.














Let it cook for another 20 minutes. After 20 minutes, the Gajrela is done!

Pour it into dishes and bowls. Garnish with almonds. You can either serve warm or cold according to your desire.

Mix Green Salad

Serving of 25
Ingredients:
  • 1/5 cup of olive oil
  • 1/2 lemon
  • 1 can of kidney beans, washed and drained
  • 1 cup corn
  • 1 and 1/2 teaspoon sea salt
  • 1 and 1/2 teaspoon oregano
  • 1 and 1/2 teaspoon basil
  • 1 and 1/2 teaspoon thyme
  • 1 and 1/2 teaspoon ground black pepper
  • 2 pounds broccoli crowns, cut as shown in the picture
  • 500 grams shredded carrots
  • 1 bunch of Romaine lettuce OR any leaf lettuce
  • 250 g baby spinach













Directions:

Add all the above ingredients (excluding the romaine lettuce and baby spinach), into a big bowl and mix. Squeeze a whole lemon on top and let it marinate in the fridge for one to two hours. If you would like to add onions, you can add 1 red onion, thinly sliced and washed.


Before serving the salad, add one bunch of Romaine lettuce OR leaf lettuce washed and cut into small pieces, and 250 grams of baby spinach (also washed) to the bowl and mix.

Your healthy salad ready to serve!

Beef Chili

Servings: 7 people


Ingredients:
  • 2 small onions cut in to small cubes/slices
  • 1 table spoon freshly ground garlic
  • 1 table spoon freshly ground ginger
  • 3 medium to large size capsicum cut into small cubes
  • 540 ml of red kidney beans can, washed and drained
  • 3 cups of tomatoes peeled and diced OR 900 mL crushed tomatoes
  • 1 and 1/2 lbs. of ground beef OR 2 lbs.
  • 1 tablespoon cumin powder
  • 1 tablespoon sea salt
  • 1 table spoon brown sugar
  • 1 pinch of clove powder
  • 1/2 teaspoon chili powder OR more, according to your taste
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon of paprika powder














Directions:

Take a deep pot and pour 1/5 cup of cooking oil, add the sliced onion in it, and cook on medium heat. Stir with spatula

When the onion becomes translucent, add garlic and stir

After a minute add ground beef and stir


When you see all the oil coming out from the ground beef and the meat colour has changed, then add the kidney beans and stir

After 5 minutes, add all the spices and ground ginger, stir again


After 2 minutes, add capsicum and stir. Let this cook for another 6 minutes


After 6 minutes, add all the tomatoes and stir. Let this cook for 30 minutes, and stir every five minutes.

After half an hour, add two cups of water and let it simmer for another 30 minutes on low heat with the lid on pot.

Your delicious healthy full of iron meal is ready! If you would like it more spicy, add 1 tablespoon of chili/hot sauce.
You can enjoy with boiled rice or crackers or dinner rolls or simply with mix salad!
